The winning recipe from Janine:
Cream Chese and Pumpkin Flan
1 cup sugar
1 can (12oz.) of evaporated milk
1 can condensed milk
1 -8oz. cream cheese
3/4 cup of pumpkin pie mix
1 pinch salt
Preheat oven to 350
Cook 1 cup of sugar in a 9 inch baking pan on medium heat until it is completely melted (carmelized) and the color is an intense golden/brown color. Swirl all around the baking pan. Let it cool. Side note from Abby: "Let it cool" is a very important step if you do not want your baking dish to explode and leave shards of glass all over your kitchen. A metal pan would probably work better. :)
Pour the evaporated milk and cream cheese in blender; cover. Blend until smooth. Pour in the condensed milk, eggs, pumpkin mix, and salt; Blend well. Pour the mix in the baking pan. Place baking pan inside a bigger and deeper rectangular pan. Pour water in the bigger pan until it covers half of the 9 inch pan.
Bake 50 to 55 minutes or until when inserted with a knife near the center it comes out clean. Remove from oven. Let it cool on a metal rack. Cover and place in the refrigerator to cool 4 hours, or overnight. Turn it over onto a serving dish and enjoy!
The runner-up recipe from Morgan, Lindsay & Sadie:
3c. rolled oats
1/4c. + 2 TBSP brown sugar
3/4 tsp pumpkin pie spice
1/4c. oil (canola, vegetable, coconut, whatever you have in hand)
1/2c. maple syrup
2 TBSP pumpkin purée
1) Heat oven for 375. Line baking pan with parchment paper
2) Mix oats, spice and brown sugar together. In separate bowl, mix salt, puree, oil and syrup. Combine both mixtures and pour onto paper-lined pan. Spread (and pat down) mixture into an even layer.
3) Bake for 10 minutes and turn the oven off, leaving the pan in the oven to cool completely.
4) In the morning, break granola into chunks and enjoy!!
